Vegan Bacon Brussel Sprouts

A very tasty way to get more vegetables into your day

We love this as a lunch or a side salad


Ingredients

1 small white onion (diced)

1 cup brussel sprouts (cut into halves)

3/4 cup peas

1 cup diced bacon or in this case vegan bacon (we used Next brand from Coles)

1 tablespoon olive oil

Salt, Pepper, Garlic Powder to taste


Method

Add oil to the pan once hot add your onions and cook until soft

Add all other ingredients to the pan and stir occasionally until sprouts and peas are cooked

Remove off heat and enjoy this bacony veggie dish
