A delicious breakfast scramble or high protein snack option with yummy vegetables, goats cheese and anti-inflammatory turmeric.
2 tablespoons milk of your choice
Finely chopped spring onion (as much as you wish)
1/4 finely chopped red capsicum
4 chopped basil leaves
3 baby tomatoes sliced
1 handful of baby spinach
1 teaspoon of turmeric powder
Season with black pepper and salt
1 tablespoon olive oil
Add egg and milk into a bowl and whisk together
Add the remainder of the ingredients into the bowl and mix well.
Pour the mixture into your oiled fry pan over medium heat allow the mixture to sit for a minute.
With a spatula continue to fold the egg mixture to avoid it sticking or burning to the pan
not too much but just so it doesn't stick until you get a cooked scramble consistency.
Enjoy with toast or on its own !
