Basil Pesto Quinoa with tomato & haloumi

A yummy healthy twist on risotto using protein packed quinoa


Ingredients:


1 cup quinoa

2 tomatoes diced

1 basil pesto sauce

1 block haloumi cheese chopped into squares


Method:

Boil quinoa in 2 cups water until soft and fluffy

Add haloumi to a fry pan with some olive oil and cook until lightly golden

Add remainder of ingredients and mix together

Enjoy your health quinoa!
