A tasty, filling, warming dish that is full of vegetable goodness.
The perfect meal to fill you up and nourish you.
1 large white onion diced
3 garlic cloves minced
1 tsp grated ginger
1 tbsp olive oil
1 cup red lentils
1 tbsp Indian curry powder
1 tbsp turmeric powder
3 cups Vegetable Liquid Stock
1 cup sweet potato cut into small cubes
1/2 red capsicum diced
1/2 cup coconut milk
2 cups baby spinach chopped
1 bunch coriander as garnish
Instructions Fry the onion, garlic and ginger in the olive oil until the onions are soft.
Add the lentils, curry powder and turmeric, and fry for 2 minutes, stirring continuously.
Pour in stock, then add the sweet potato, capsicum and the coconut milk.
Cook for about 30 minutes on low heat, stirring occasionally, making sure the dahl does not stick to the bottom of the pan. Add more water or stock if required.Add chopped spinach at the end of cooking and stir through for two minutes before removing from heat. Garnish with coriander. Enjoy this with a side of basmati rice, it really is the perfect meal full of iron and fibre. Great for heart health too!
